Currently, the best documentation is the POX Wiki Manual (also independently translated into Brazilian Portuguese ). Note that this contains a FAQ!

SDNHub has a POX tutorial. They provide a ready-to-run VM image that comes with POX installed along with some tutorial components of their own.

There is a POX version of the venerable Stanford OpenFlow Tutorial.

The Mininet wiki and, in particular, the Mininet FAQ are also great resources. This is especially true if you’re also using Mininet, but they actually contain a fair amount of generally useful SDN/OpenFlow/networking know-how.
